BURGERS AU POIVRE WITH MOZZARELLA AND BLUE
1 pound ground beef (85 percent lean) 1 1/2 teaspoons cracked black pepper TO SERVE: 4 slices Vienna bread 4 slices (4 ounces) Mozzarella cheese Salt 1 tablespoon chopped parsley 1 ounce crumbled Blue cheese
Heat large, heavy frying pan over medium heat 5 minutes.
Meanwhile shape ground beef into 4 oval patties, 1/2 inch thick. Lightly press pepper into both sides. Brush pan lightly with oil. Add burgers and pan-broil 6 minutes, turning once.
Meanwhile place a slice of Mozzarella cheese on each bread slice. Heat Ito 2 minutes under broiler until cheese is melted.
Season burgers with salt and sprinkle with parsley. Place burgers on melted cheese and sprinkle with Blue cheese. Heat 1 minute under broiler to melt Blue cheese.
