AMARETTO CHEEESECAKE
50 Nilla Vanilla Wafers, finely rolled (about 2 cups crumbs) 1 cup sugar, divided use 1/2 cup finely chopped almonds 1/2 cup margarine, melted 3 packages (8 ounces each) cream cheese, softened 1 cup dairy sour cream 4 eggs 1/2 cup amaretto liqueur 2 kiwi fruit, peeled, sliced and halved (for serving)
Combine vanilla wafer crumbs, 1/3 cup sugar, almonds and margarine; press against bottom and 2-inches up sides of a 9-inch spring form pan. Set aside.
Beat together cream cheese and the remaining 2/3 cup sugar until smooth; blend in sour cream, eggs and amaretto. Pour into prepared crust.
Bake at 350 degrees F for 1 hour. Turn oven off and allow cheesecake to remain in oven 30 minutes, leaving door slightly ajar. Cool, then refrigerate 4 hours or until serving time.
TO SERVE: Remove cheesecake from pan. Garnish with kiwi slices.
