IMPOSSIBLE ZUCCHINI CASSEROLE
4 cups sliced zucchini 1 cup Bisquick 4 eggs, beaten 1/2 cup chopped onion 1/2 cup grated cheese 2 teaspoons chopped fresh parsley 1/2 teaspoon vegetable oil 1/2 teaspoon salt 1/2 teaspoon garlic powder 1/2 teaspoon oregano 8 ounces mozzarella cheese, shredded or sliced (for topping)
Mix all except Mozzarella cheese well. Place in well-greased 13x9. Top with either shredded Mozzarella or Mozzarella slices.
Bake in 350 degree F oven for 40 minutes.
