NEW POTATOES WITH LEMON AND CHIVES
1 1/2 pounds new potatoes 1 teaspoon salt 4 tablespoons butter or margarine 3 tablespoons snipped chives 1 tablespoon grated lemon zest 1 tablespoon lemon juice 1/2 teaspoon salt 1/4 teaspoon coarse black pepper Peel a band of skin from around center of each potato. Add salt to 1-inch water in saucepan and bring to boil. Add potatoes and cover pot, cooking until tender, about 20 minutes.
Drain water from pan, remove cover and place a clean folded towel directly on potatoes. Cook potatoes for 2 minutes more to dry them.
Melt butter; add all remaining ingredients. Add butter mixture to potatoes and toss to coat.
