RICK BROWNE'S BBQ BAKED BUTTER BEANS

4 slices bacon, chopped
1 medium onion, diced
8 cups frozen lima beans, cooked according to package directions
1 cup ketchup
1 cup purchased barbecue sauce (such as Cattlemen's Golden Honey brand)
1/4 cup maple syrup
2 tablespoons prepared yellow mustard
2 tablespoons dark brown sugar
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/4 teaspoon lemon-pepper seasoning

Preheat the oven to 325 degrees F.

Cook bacon with onion in a large saucepan until bacon is brown and crisp and the onions are starting to brown and become transparent, about 5 to 7 minutes.

Pour onions and bacon into a 2-quart casserole or Dutch oven. Add cooked beans, ketchup, barbecue sauce, syrup, yellow mustard, sugar, dry mustard, salt and lemon-pepper seasoning. Stir to combine.

Cover casserole dish; bake until beans are very tender, about 1 hour to 1 hour and 20 minutes. Serve hot.

VARIATION:

BBQ SUCCOTASH
Add 2 cans or bags of frozen corn.

Yield: 6 to 8 servings
