DELAWARE RAISIN CAKE

1 (1 lb.) box raisins
3 cups cold water, divided use
1 1/2 cups chopped apples (peeled)
2 cups sugar
1 stick (1/2 cup) butter, softened
1 level tablespoon baking soda (dissolved in a little water)
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon salt
4 cups all purpose flour

Preheat oven to 325 degrees F. Grease a large tube pan or Bundt pan.

Put raisins, 2 cups cold water, and apple in a pan and cook for 10 minutes. Remove from heat and set aside to cool.

Combine sugar and butter. Stir into cooled apple mixture along with baking soda, spices, and salt. Stir in the remaining 1 cup cold water; mix thoroughly. Add flour and mix thoroughly. Pour into prepared pan.

Bake at 325 degrees F for one hour or until a pick comes out clean.

Makes 2 (9-inch) cakes
