SPICED BANANA FRUIT CAKE
3 1/2 cups sifted all-purpose flour 4 tsp. double acting baking powder 1 tsp. salt 1/2 tsp. baking soda 2 tsp. ground cinnamon 2 tsp. ground ginger 1 tsp. ground nutmeg 1 1/3 cups shortening 1 1/3 cups sugar 4 eggs, beaten 2 cups (4 to 6) mashed bananas 1 cup raisins 1 1/2 cups chopped nuts 4 cups diced mixed candied fruit
Sift flour with baking powder, salt, baking soda, and spices. Set aside.
Cream shortening, gradually blend in sugar; blend until light and fluffy. Beat in eggs, one at a time. Add flour mixture alternately with mashed bananas. Mix raisins, nuts, and fruit and stir into batter.
Turn into two well greased 9x5x3-inch pans which had been lined with aluminum foil.
Bake at 300 degrees F for two hours. Store cakes in a tightly closed container.
