TROPICAL DELIGHT
1 (3 1/4 oz) pkg lemon pudding mix (cook-and-serve) 1 cup crushed pineapple, drained 3 cups miniature marshmallows 3 tablespoons milk Toasted coconut (for garnish)
In top of double boiler, prepare pudding as package directs; cool. Divide half of lemon mixture evenly into 8 parfait glasses. Spoon crushed pineapple over pudding in parfait glasses; set aside.
In top of double boiler, combine marshmallows and milk; cook and stir over medium heat, until marshmallows melt. Spoon over pineapple. Top each parfait with remaining lemon mixture. Garnish with coconut.
Chill at least 2 hours before serving.
