GREEN BEANS WITH SHALLOTS2 pounds green beans, trimmed
5 tablespoons olive oil or butter
4 to 5 shallots, thinly slivered
Salt and pepper, to taste
Bring a large pot of water to a boil. Salt the water, add the beans and cook until crisp tender, 4 to 5 minutes. Drain and transfer immediately to a bowl of ice water, and let cool for 1 minute. Drain again and pat dry.
In a large frying pan over medium heat, warm the oil or butter and fry the shallots until browned. Season with salt and pepper. Spoon shallots over green beans and serve.
