SPIRITED PORK CHOPS
6 pork loin chops, cut 1/2-inch thick 1/`2 cup all-purpose flour 1 teaspoon salt Ground black pepper 2 tablespoons salad oil 1 clove garlic, finely chopped 2 tablespoons grated orange peel 1/4 cup orange juice 1/2 cup vodka 1/3 cup crushed pineapple 1/4 cup pineapple juice
Coat pork chops with a mixture of the flour, salt, and pepper.
In a large skillet or Dutch oven, brown chops on both sides in the salad oil over medium heat Sprinkle garlic and orange peel evenly over chops.
Mix together orange juice, vodka, crushed pineapple, and pineapple juice. Pour mixture over chops in skillet and continue cooking over low heat about 45 to 50 minutes or until chops are tender. Turn chops occasionally.
Spoon thickened sauce in skillet over chops before serving.
