LEMONY STUFFED FLOUNDER1/3 cup chopped celery
2 tablespoons chopped onion
2/3 cup butter, divided use
1 cup herb-seasoned stuffing mix
1 tablespoon chopped fresh parsley tablespoon lemon juice
1 teaspoon grated lemon zest
1/4 teaspoon salt
1/4 teaspoon ground black pepper
4 medium fresh flounder fillets (or thawed frozen flounder fillets)
1/2 teaspoon dillweed
Saute the celery and onion in 1/3 cup butter in a saucepan over medium heat. Add the stuffing mix, parsley, lemon juice, lemon zest, salt and pepper and mix well.
Cut the flounder fillets into halves and arrange of the halves in an ungreased 9x9-inch baking dish. Spread the stuffing mixture over the fillet halves and top with the remaining halves.
Melt the remaining 1/3 cup butter in small saucepan and stir in and the dillweed. Pour over the fish.
Bake at 350 degrees F on the center oven rack for 20 to 30 minutes or until the fish flakes easily.
