PIZZA LASAGNA"This recipe was developed by a League member's eight-year-old daughter, who serves it quite often for her family."
1 whole wheat pizza crust, such as Boboli
1 (20 ounce) jar spaghetti sauce
8 ounces turkey pepperoni
2 cups (8 ounces) shredded low-fat mozzarella cheese
1/2 cup (2 ounces) grated Parmesan cheese
Preheat the oven to 350 degrees F.
PREPARE THE PIZZA CRUST:Use a pizza cutter to cut the pizza crust into about eleven strips. Arrange three of the strips in a 9x13-inch baking dish.
ADD THE LAYERS:Spread about 1/2 cup of the spaghetti sauce over the pizza crust slices with a large spoon. Arrange one-third of the pepperoni slices over the sauce and sprinkle with one-third of the mozzarella cheese. Repeat the layers two more times to make three layers.
TOP AND BAKE:Sprinkle the top with the Parmesan cheese. Use an oven mitt to place the baking dish in the oven.
Bake for 20 minutes or until bubbly. Remove the lasagna from the oven with the oven mitt.
