POTATOES AND VIRGINIA HAM AU GRATIN1/2 cup chopped onion
1/2 cup chopped green bell pepper (optional)
2 tablespoons margarine
1/4 cup all-purpose flour
1/2 teaspoon dry mustard
2 1/2 cups milk
1/4 teaspoon pepper
2 cups (8 ounces) shredded sharp Cheddar cheese, divided use
2 cups chopped cooked Virginia or country ham
6 cups thickly sliced cooked white potatoes
Preheat the oven to 350 degrees F.
Saute the onion and bell pepper in a skillet until golden brown. Remove from the heat and set aside.
Cook the margarine, flour and dry mustard in a saucepan over low heat until bubbly, stirring constantly.
Stir in the milk gradually. Cook until smooth.
Add the sauteed vegetables, pepper and 1 1/2 cups of the cheese. Heat until the cheese is melted stirring constantly. Stir in the ham.
Alternate layers of the cheese sauce and potatoes in a lightly greased 9x13-inch baking dish until all ingredients are used.
Bake for 45 minutes. Top with the remaining 1/2 cup cheese. Bake until the cheese melts.
