LEMON, GARLIC AND ROSEMARY GRILL SPLASH

"Brush on chicken, lamb, pork or fish while grilling or roasting, or use as marinade."

4 large garlic cloves, coarsely chopped
1 1/2 tablespoons finely chopped fresh rosemary leaves
1 1/2 teaspoons coarse salt
1 teaspoon finely grated lemon zest
1/3 cup fresh lemon juice
2 tablespoons water
2 tablespoons extra-virgin olive oil
Freshly ground black pepper

In mortar, use pestle to pound garlic, rosemary, salt and lemon zest into a coarse paste.

Stir in lemon juice, water, olive oil and season with pepper.

Makes 3/4 cup.
