RED CHERRY ROLL

"Spry tested recipe."

1 cup sugar
1 tablespoon flour
2 cups cherry juice
1 tablespoon butter
1 1/2 cups sifted flour
2 1/4 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons shortening
1/2 cup milk
2 cups canned red cherries

Mix sugar and flour. Add cherry juice and boil 1 minute. Add butter and let stand.

Sift flour with baking powder and salt and cut in the shortening thoroughly. Add milk, mixing until soft dough is formed. Turn out on floured board, knead lightly for about 20 seconds and roll into an oblong about 1/4-inch thick.

Spread cherries on the dough, roll like a jelly roll and press edges together. Cut into 1 1/2 inch slices. Place slices in greased pan and pour cherry juice over the top.

Bake in moderately hot oven (425 degrees F) for 25 to 30 minutes.

Makes 6 servings
