DEEP-DISH CHERRY TAPIOCA
"General Food tested recipe."
1 (20 ounce) can sour pitted cherries
1/2 cup Minute tapioca
1 teaspoon salt
4 cups (total) hot water and cherry juice
1 cup brown sugar, firmly packed
1 tablespoon lemon juice
1/8 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
2 tablespoons butter
Cream (optional, for serving)
Add minute tapioca and salt to water and cherry juice and cook in double boiler 15 minutes, or until tapioca is clear, stirring frequently.
Place cherries in greased baking dish, add the lemon juice, mixture of sugar and spices and dot with butter. Add tapioca mixture.
Bake in a moderate oven (350 degrees F) 45 minutes.
Serve plain or with cream.
