COLESLAW WITH APPLES

1/2 cup lowfat lemon yogurt
2 tablespoons cider vinegar
1 tablespoon light mayonnaise
1/4 teaspoon each salt and ground pepper
4 cups green and red cabbage, thinly sliced or shredded
1 Golden Delicious apple, cut in thin wedges
Shredded carrots (optional)

Whisk together yogurt with vinegar, mayonnaise, salt and pepper, in medium bowl.

Add green and red cabbage and apple. (If you like, add some shredded carrots.)

Servings: 4
