REAL GOOD TURKEY BURGERS1 pound ground turkey
1 garlic clove minced
1/3 cup onion, finely chopped or grated
2 slices good quality white bread, cut into cubes
1 1/2 tablespoons white Worcestershire sauce
4 teaspoons olive oil
3/4 teaspoon dried oregano, crumbled
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 whole wheat hamburger buns, toasted
In a medium bowl, mix together the turkey, garlic, onion, bread, Worcestershire sauce, 2 teaspoons of the olive oil, the oregano, and salt and pepper. Mix well and form into 4 patties.
In a large nonstick skillet, heat the remaining 2 teaspoons of oil over a medium flame until hot but not smoking. Add the burgers and brown on both sides,
to 2 minutes on each side (don't press down on burgers with a spatula, which will squeeze out the juice). Add 1 tablespoon of water to the skillet and cover tightly. Cook for 8 to 10 minutes longer, or until the burgers are cooked through and the juices run clear.
Transfer to the toasted buns and add condiments as desired.
FOR TURKEY MEATBALLS:Also makes great turkey meatballs...just shape into golf-ball-size orbs and brown them in a little olive oil.
