FRENCH TOAST TORTILLAS WITH BERRIES

"Here ís a great twist for French toast - replace the sliced bread with flour tortillas!"

2 large eggs
1/3 cup milk
2 tablespoons granulated sugar
1 1/2 teaspoons rum (optional)
1/4 teaspoon ground cinnamon
1/4 teaspoon vanilla extract
1/4 teaspoon almond extract
4 (burrito-size) flour tortillas, cut into quarters
4 teaspoons butter or margarine
FOR SERVING:
Confectioners' sugar
2 cups sliced strawberries
2 cups blueberries
Maple syrup

Beat eggs, milk, granulated sugar, rum, if desired, cinnamon, vanilla extract and almond extract in large shallow bowl. Soak tortillas in egg mixture, 10 minutes, until softened.

Melt butter in small saucepan. Add 1 teaspoon of the melted butter to a large nonstick skillet and heat over medium-high heat. Add tortilla quarters and cook until golden, 2 to 3 minutes, turning once. Transfer to large serving platter; cover and keep warm. Repeat process three more times with remaining tortilla quarters and melted butter.

TO SERVE:
Sprinkle tortillas with confectioners' sugar and serve with strawberries and blueberries. Serve with maple syrup.

Makes 4 servings
