SORT-OF SPANISH RICE1 cup uncooked rice
1/4 cup chopped onion
3 tbsp chopped green bell pepper
2 tbsp oil
2 cups stewed tomatoes
2 tsp sugar
4 pork chops or 3/4 lb hot sausage
1/2 cup grated parmesan cheese
In ovenproof skillet, saute rice, onions and green peppers in oil until rice is translucent.
Add tomatoes and sugar to skillet. Top with pork chops or sausage and cheese.
Bake covered, in 350 degree F oven for about one hour.
