ST. MARGARET MARY'S BAKED FISH

"JimFelde, who heads the fish fry at the church, said the recipe was broken down from one that calls for around 140 pounds of fish."

4 pounds frozen haddock or cod (do not thaw)
1 pound (4 sticks) butter
1/2 tablespoon paprika
1 teaspoon dried parsley
1/2 teaspoon seasoning salt
1/2 teaspoon granulated garlic (coarsely ground garlic powder)
1/2 teaspoon pepper
1 tablespoon lemon juice

Preheat oven to 350 degrees F.

Place frozen fish in a 13x9-inch baking pan.

In medium saucepan, melt butter. Add remaining ingredients and stir to combine. Pour sauce over fish.

Bake, uncovered, in preheated oven45 minutes or until fish is cooked through.

Makes 8 servings
