ONE-POT BRATWURST AND SHRIMP JAMBALAYA
1 (19 oz) pkg Bob Evans Tabasco or Original Bratwurst, cut into 1 inch pieces 1 tbsp. vegetable oil 1 small onion, diced 1 small red pepper, diced 1 15 oz can diced tomatoes in juice 2 bottles (8 oz each) clam juice (or 16 oz. beef broth) 2 cups water 2 cups uncooked rice 1 to 2 bay leaves 1/4 tsp. hot pepper sauce 1 (12 oz) pkg frozen precooked shrimp, thawed 1 (10 oz) pkg frozen peas
In a large, deep skillet, heat oil over medium heat. Add bratwurst, onion and peppers and cook until bratwurst are done, about 10 minutes.
Add tomatoes, clam juice, water, rice, bay leaf and hot pepper sauce. Bring to boil. Cover, reduce heat to low and simmer 15 minutes.
Stir in shrimp and peas. Cover and heat over low until shrimp and peas are hot, about 5 minutes.
