COUSCOUS WITH APRICOTS AND PINE NUTS

1 tablespoon each: olive oil, butter
1/2 cup finely chopped onion
2 medium cloves garlic, peeled, minced
1/4 teaspoon each: ground cinnamon, ground ginger, turmeric
Pinch ground red pepper
1/2 teaspoon salt
1 cup plain couscous
1 (14 1/2 ounce) can low-sodium chicken broth plus water to equal 2 cups
1/4 cup each: golden raisins, diced dried apricots, pine nuts, minced parsley

Heat oil and butter in medium saucepan until butter has melted. Add onion and garlic; saute 4 minutes.

Add cinnamon, ginger, turmeric, pepper and salt; stir 30 seconds.

Add couscous, broth, raisins and apricots. Heat to boil, stirring well. Cover; remove from heat. Set aside 5 minutes.

Stir in pine nuts and parsley. Cover; let stand 5 minutes.

Makes 4 servings
