DREAMY WHITE BEANS2 cups dried white peas, soaked or 4 (15-ounce) cans, rinsed, drained
2 large sprigs rosemary
12 sage leaves, tied together with string
1 1/2 tablespoons minced garlic
1 1/4 teaspoons salt, or to taste
Freshly ground pepper
Extra-virgin olive oil
Balsamic vinegar
Minced parsley
Place soaked, uncooked beans in a large pot and cover with water by 2 inches. Add rosemary and sage; bring to a boil. Lower heat, and simmer 30 minutes until tender. (For canned beans, place in a pot with 2 cups cold water, along with rosemary and sage; bring to a boil, lower heat and simmer 30 minutes.)
Remove and discard herbs. Drain beans, saving water. Add garlic to hot beans. Mash or puree some beans with some cooking water until they are smooth and thick. Season with salt and pepper.
Serve topped with a drizzle of olive oil, a splash of balsamic vinegar and a sprinkling of minced parsley.
