SPICED FRIED ONIONS WITH RICE3 tablespoons peanut or sunflower oil
2 large onions, sliced
1 tablespoon onion seeds
1 large cinnamon stick, broken
2 pieces star anise
6 black peppercorns
2 bay leaves
1 cup long-grain rice, uncooked
2 cups vegetable or chicken broth
Salt (to taste)
Heat oil in a large pan, then add onions, spices and bay leaves, and cook for 4 to 5 minutes.
Stir in rice, add broth and salt, and bring to a boil. Stir, then cover and simmer for 12 to 15 minutes. Season to taste before serving.
