MACADAMIA NUT FUDGE"I like to use unusual nuts to make my quick fudge a little bit special. Look for unsalted macadamia nuts in your natural foods store or the natural food aisle of your supermarket. Other nuts may be substituted, if you like."
Butter for the baking dish
1 pound bittersweet chocolate, coarsely chopped
1 cup sweetened condensed milk
1 tablespoon vanilla extract
2 cups macadamia nuts, preferably unsalted
Lightly butter an 8x8 inch baking dish.
In the bottom of a double boiler or in a large saucepan, bring about 1 inch of water to a simmer. In the top of the double boiler or a bowl set over but not touching the water, combine the chocolate and sweetened condensed milk. Heat, whisking constantly, until the chocolate is completely melted.
Stir in the vanilla and the nuts. Scrape the mixture into the prepared pan and smooth the surface with a spatula. Set aside to cool and harden, about 2 hours. (May cover and store for 3 days at room temperature.)
