JUST ENOUGH LASAGNA 3 sheets no-boil lasagna
1 Italian sausage
1 ground meat patty (4 oz)
1 small onion, minced
1 tsp minced garlic
1 Tbsp oil
1 (14 oz) jar pasta sauce
1 cup ricotta cheese
1 egg
[dash ground cinnamon]
1 or 2 slices of mozzarella (or 1/4 cup shredded mozzarella)
Preheat oven to 350 degrees F
Remove sausage meat from casing and mix with ground beef, set aside.
In a 10-12-inch skillet, sauté onion and garlic in oil for 1 minute.
Add crumbled ground meat and sausage. Saute until all the pink is gone from the meat, about 3-4 minutes.
Add 1/4-cup pasta sauce to pan and turn heat down to low. Saute another minute or two until it looses some moisture.
Combine the egg with the ricotta and add cinnamon.
Spray the loaf pan with cooking spray and pour a few tablespoons of sauce on the bottom of the pan. Layer 1 piece of lasagna, a couple of tablespoons of sauce, half the meat mixture, then half the cheese mixture Repeat second layer with another piece of lasagna then more sauce, then the meat & cheese mixture. Top with last slice of lasagna, sauce and mozzarella.
Bake covered with foil for 45 minutes. Remove foil cover last 5 minutes to brown. Let stand 8-9 minutes before serving.
Great reheated.
