FRESH SPINACH BAKE
2 tablespoons butter or margarine 1/2 cup finely chopped onion 1 clove garlic, minced 2 bags (10 oz. each) fresh spinach, washed 1/4 cup half-and-half 1/4 cup plus 2 tablespoons grated parmesan cheese, divided use 1/4 cup plain dry bread crumbs 1/2 teaspoon leaf marjoram, crumbled Dash ground black pepper Dash ground nutmeg
Butter a 1-quart baking dish, set aside.
In a small saucepan, melt butter; saute onion and garlic until soft, about 5 minutes.
Wash spinach and heat in a large, covered saucepot with the water that clings to the leaves. Cook three to five minutes, until limp. Drain, chop and squeeze spinach thoroughly dry.
Combine half and half, 1/4 cup of the cheese, bread crumbs, marjoram, pepper, nutmeg, onion and garlic with spinach. Turn into prepared baking dish. Sprinkle with the remaining 2 tablespoons cheese.
Bake 30 minutes in a 350 degree F oven or until cheese is lightly browned.
