PARTY COCONUT KISSES2 egg whites
1/4 teaspoon salt
1 tablespoon Instant Maxwell House Coffee
1/2 cup sugar
1 cup coconut
1/4 teaspoon vanilla
pink-tinted coconut or chopped pistachio nuts (optional, for garnish)
Beat egg whites and salt until foamy.
Combine instant Maxwell House and sugar and add to egg whites gradually, beating after each addition until sugar is blended. Continue beating until mixture will stand in peaks. Fold in coconut and vanilla. Drop from teaspoon onto well-greased baking sheet.
Bake in a very slow oven (250 degrees F) 30 minutes or until done.
Garnish with pink-tinted coconut or pistachio nuts.
