SWEET POTATO CASSEROLE

"This is totally cooked in the microwave. A great idea for when your turkey or ham is taking up all the room in the oven."

4 medium sweet potatoes
1/4 cup plus 1 tbsp packed brown sugar, divided use
1/4 cup plus 1 tbsp butter, divided use
1/2 tsp salt
1 (8 oz) can crushed pineapple, with juice
1 Tbsp packed brown sugar
1 Tbsp butter
1 tsp water
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 1/2 cups mini-marshmallows
1/4 cup chopped pecans

Wash sweet potatoes. Prick each 2-3 times with fork to allow steam to escape. Arrange in microwave at least an inch apart. Microwave on full power until fork-tender (about ten minutes). Cover and let stand 5 minutes.

Peel and slice potatoes into a 2-quart casserole. Add 1/4 cup brown sugar, 1/4 cup butter and the salt. Mash until no lumps remain. Mix in pineapple. Microwave casserole on full power for 2 minutes. Stir and set aside.

To make the topping, place remaining 1 tablespoon brown sugar, remaining 1 tablespoon butter, 1 teaspoon water, cinnamon and nutmeg in a medium microwave-safe bowl. Microwave bowl on full power until butter is melted (about 90 seconds), stirring half way through.

Add marshmallows to the topping mixture; toss to coat. Place this mixture over top of sweet potatoes in the casserole. Microwave casserole on full power until the marshmallows are melted and potatoes are heated through (about three minutes).

Sprinkle with chopped pecans.

Makes 8 servings
