ZUCCHINI SAUCE AND SPAGHETTI

8 ounces Mueller's Spaghetti, uncooked
FOR THE SAUCE:
1 medium onion, sliced
2 tablespoons olive oil
6 cups zucchini, sliced, about 2 medium
3 cups tomatoes, diced
1/2 tsp. salt
1 bay leaf
1/4 tsp black pepper
1/4 tsp. dried basil leaves
1/4 tsp. dried oregano
Grated Parmesan cheese (for serving)

Cook spaghetti according to package directions; drain.

Saute onion in olive oil in a large skillet.

Add the remaining ingredients for the sauce. Simmer, covered 15 minutes. Uncover and simmer 10 minutes longer. Discard bay leaf.

Serve over cooked spaghetti. Sprinkle Parmesan cheese to taste.

Makes 4-6 servings
