ZUCCHINI DROP COOKIES
1 cup grated zucchini 1 tsp baking soda 1 cup sugar 1/2 cup shortening (or butter, softened) 1 egg; beaten 2 cups flour 1 tsp ground cinnamon 1/2 tsp ground cloves 1/2 tsp salt 1 cup chopped nuts 1 cup raisins
Mix together zucchini, baking soda, sugar, butter, and beaten egg.
Sift in flour, cinnamon, cloves, and salt. Stir to blend. Stir in raisins and nuts. Drop batter by the teaspoonful on greased cookie sheet.
Bake in preheated 375 degree F oven 12-15 minutes.
