SOFT AND CHEWY CHOCOLATE CHIP COOKIES1 1/4 cups sugar
1 1/4 cups firmly packed brown sugar
1 1/2 cups margarine or butter, softened
2 teaspoons vanilla
3 eggs
4 1/4 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 to 2 (12 oz.) pkg. (2 to 4 cups) semisweet chocolate chips*
Heat oven to 375 degrees F.
In large bowl, combine sugar, brown sugar and margarine; beat until light and fluffy. Add vanilla and eggs; blend well. Add flour, baking soda and salt; mix well. Stir in chocolate chips. Drop dough by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheets.
Bake at 375 degrees F for 8 to 10 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets.
*If you like your cookies with lots of chocolate, use 2 packages of chocolate chips.
TIPS:- Cookie dough prepared with a bit of extra flour produces round, chunky cookies.
- Overbaked cookies will be tough and hard. Bake cookies until their edges just turn golden; they will continue to cook and firm up as they cool.
Makes 6 dozen cookies
