BAKED SWEET POTATO CHIPS"Homemade potato chips have great rhythm and none of the blues that come with the packaged species. These thin baked rounds, sprinkled with brown sugar and freshly grated nutmeg, hit you like funky soul music: Each bite is a jumping, sweet sensation. These are great couch potatoes, but also perfect for barbecues and steaks. Ketchup would be a crime, but if you must dunk, chunky applesauce will do the trick."
4 medium sweet potatoes
6 tablespoons unsalted butter
Brown sugar (to taste)
salt (to taste)
Freshly grated nutmeg (to taste)
Preheat the oven to 400 degrees F. Line 2 baking sheets with aluminum foil.
Slice the potatoes crosswise into thin rounds.
Melt the butter in a saucepan, then pour it into a shallow dish. Dip both sides of each potato slice in the butter, then arrange the slices in a single layer on the baking sheets.
Bake until crisp and golden brown, 30 to 40 minutes; reverse the pans from front to back after 15 minutes to ensure even baking.
Remove from the oven and quickly drain on paper towels. Immediately sprinkle the chips lightly with brown sugar and salt, then grate a little fresh nutmeg over the tops. Serve warm.
