SOUTHWESTERN CORN RELISH
1 (12 ounce) can niblets com kernels, rinsed and drained 1/2 cup chopped red onion 1 small green bell pepper, chopped 3 tablespoons red wine vinegar 2 tablespoons olive oil 1 teaspoon sugar 1/4 teaspoon salt 1/4 teaspoon ground cumin 1/4 teaspoon ground black pepper
In medium bowl, combine corn, onion, and bell pepper; set aside.
In small bowl, whisk together remaining ingredients. Pour dressing over vegetables; toss to coat.
