CASUAL CASSOULET
1 tablespoon olive oil 1 medium onion, thinly sliced 2 cloves garlic, minced, or to taste 1/4 pound smoked sausage (optional), cut in 1/2-inch slices 1 teaspoon dried Italian herbs 1 (14 1/2 ounce) can whole tomatoes, cut into quarters 1 (15 ounce) can small whole Irish potatoes, drained 1/4 cup white wine 1 (10 ounce) can chicken, undrained 1 (14 1/2 ounce) can white kidney beans or great northern beans, rinsed and drained
In a large heavy pot over low heat, add olive oil. Add the onion and garlic and cook until the onion is tender and slightly transparent, 3 to 5 minutes.
Add the sausage, if using, and saute until brown, 5 minutes.
Add the herbs, tomatoes, potatoes, wine and water drained from the canned chicken. Bring to a boil, reduce heat and simmer for 5 minutes.
Gently stir in the chicken and beans and heat through, about 10 minutes.
