YUM YUM NOODLES
"The red pepper flakes may be omitted from the recipe. Add to individual servings for those who like more spice."
1 pound udon uncooked noodles, spaghetti or fettuccine 2 tablespoons sesame oil, divided use 1/2 cup chunky peanut butter 1/4 cup soy sauce 2 tablespoons rice vinegar 2 tablespoons brown sugar 1 tablespoon minced fresh ginger 4 green onions, thinly sliced 1 teaspoon minced garlic, or to taste 1/4 teaspoon red pepper flakes (optional)
Cook the noodles according to package directions. Drain, reserving one cup of cooking liquid. Toss pasta with 1 tablespoon sesame oil. Set aside.
Meanwhile, combine peanut butter, soy sauce, rice vinegar, brown sugar and remaining tablespoon of sesame oil. Whisk until mixture is smooth and emulsified. Stir in the ginger, green onions and garlic. Add pepper flakes, if desired.
Add noodles to the sauce. Add reserved pasta water, a few tablespoons at a time, and toss until noodles have a silky coating.
May be served hot, room temperature or cold.
