BAKED TACOS
1 teaspoon olive oil 12 ounces ground turkey breast 1 (15 ounce) can rinsed and drained pinto beans 4 teaspoons lower sodium taco seasoning 1 cup mild salsa 8 (6- or 7-inch) fat-free flour tortillas GARNISHES: Shredded lettuce, diced tomatoes, reduced-fat sour cream, reduced-fat shredded Monterey Jack cheese
Heat oven to 450 degrees F. Cover cookie sheet with foil; coat with cooking spray.
Heat oil in skillet. Add turkey. Cook 5 minutes; drain.
Add beans, salsa and taco seasoning to turkey in skillet. Bring to boil, reduce heat to low. Simmer uncovered 5 or 6 minutes, stirring and mashing some of the beans as you stir, until thick.
Spoon mixture into center of tortillas. Fold in half. Press down and place on cookie sheet. Coat tortillas with cooking spray.
Bake 9 minutes or until lightly browned.
To serve, garnish with lettuce, tomatoes, sour cream and cheese.
