GROUND BEEF SHEPHERD'S PIE
1 tablespoon vegetable oil 1 onion, chopped 1 pound ground beef 1 teaspoon dried basil 1 clove garlic, minced 1 cup green beans, drained 1 cup tomatoes, diced 2 potatoes, cooked and mashed 1 egg, beaten 1/2 cup water 1/4 cup shredded Cheddar cheese, optional Preheat oven to 350 degrees F. Heat oil in a large skillet over medium heat. Add onion and saute for 5 minutes. Add the ground beef and basil and saute for 5 more minutes. Add the garlic, green beans and tomatoes; stir well and simmer for 5 minutes. Pour mixture into a 2 quart casserole dish. In a separate medium bowl, combine the potatoes with the egg and 1/2 cup water. Mix well and spread over meat mixture. Bake at 350 degrees F for 15 to 20 minutes, or until potatoes start to brown on top. Sprinkle with cheese, if desired, 5 minutes before done cooking. Makes 4 servings From: Kelly~WA, 08-19-2000 |
