CHICKEN MEAT LOAF1 pound ground chicken
1 cup crushed saltine crackers (24)
1/2 cup minced fresh onion
1/4 cup water
2 tablespoons minced green bell pepper
2 tablespoons ketchup
1 tablespoon Dijon mustard
1 teaspoon prepared horseradish
1/2 teaspoon paprika
1/4 teaspoon pepper
Vegetable cooking spray
Combine all the ingredients except cooking spray in a bowl, and stir until well-blended. Pack mixture into an 8 x 4-inch loaf pan coated with cooking spray.
Bake at 350 degrees F for 45 minutes or until done.
Makes 6 servings (serving size: 2 slices)
