ORIENTAL TURKEY SALAD

FOR THE SALAD:
1 cup thinly-cut onion wedges
1 (6 ounce) pkg frozen pea pods
1/2 pound cooked honey-roasted turkey breast, shredded
2 cups fresh bean sprouts
1/2 cup peanuts (optional)
FOR THE DRESSING:
1/4 cup vegetable oil
1/2 cup cider vinegar
1 tablespoon peanut butter
1 tablespoon soy sauce
1 teaspoon red chili flakes

TO MAKE THE SALAD:
Blanch onions and peas for 30 seconds in boiling water.

Combine onions, peas, turkey, sprouts, and peanuts in a bowl; chill.

TO MAKE THE DRESSING:
Combine oil, vinegar, peanut butter, soy sauce, and chili flakes with a wire whisk; pour over salad; toss.
