POTATO SALAD WITH HERB MAYONNAISE (SALADE POMMES DE TERRE)
2 lbs. potatoes, scrubbed well 5 tbsp. Baron Philippe Chardonnay 3/4 cup mayonnaise 3 tbsp. Dijon mustard 3 tbsp. lemon juice 1/4 cup minced, fresh herbs (basil, parsley, dill) Salt and freshly ground pepper to taste Mixed salad greens (enough for 6 servings) 1/4 tsp. salt 1/4 tsp. pepper 6 tbsp. olive oil 2 tbsp. vinegar
Boil potatoes until tender. Drain and set aside. When cool, peel and slice thinly (1/4--inch slices).
Toss gently in a bowl with the Chardonnay.
In a separate bowl, combine the mayonnaise, Dijon mustard, lemon juice, fresh herbs and salt and pepper to taste.
Pour over potatoes and toss lightly until well coated.
Chill for one hour.
Immediately before serving, toss salad greens with oil, vinegar, 1/4 teaspoon salt and 1/4 teaspoon pepper. Serve with potato salad.
