I am in charge of cooking a green eggs and ham breakfast for our elementary school (500 kids) and not being able to use the cafeteria. I did get permission to use the warming trays. I have ordered the egg mixture from Sysco Food Systems and plan on cooking in 5 electric frying pans. Then putting the eggs into the warmers. I need to know how I keep the eggs from getting dried out. Any suggestions you can provide would be greatly appreciated.
