I think I will try a combination of methods - the cupcakes and freezing a cake in the jelly roll pan.
I am doing a simple luncheon for a Garden Club group - ten people. It doesn't matter to them what kind of dessert, but the main course is cold and can be done ahead of time, so I would have time for a lengthy preparation.
Of course, I may make a back-up dessert, too, in case I get in way over my head with these little cakes!
