Which emulsifer, and how much should be used in a
Cayenne Pepper based chicken wing sauce, containing 1 stick of butter?
Ingredients:
Cayenne peppers/vinagar hot sauce
Garlic, orange juice, gin, 1 stick of butter,
tabasco sauce, honey.
Any help would be greatly appreciated!
