Tony, Try using margarine instead of butter. Margarine is better for you and cheaper too. Besides, you think anyone is going to know the difference? Anyway, the trick is warm the sauce without the margarine first, then stir in the room tempeture margarine and it should hold together well for you making a nice emulsion. good luck, chefjim
