Am "coordinating" niece's outdoors wedding in July in Iowa. I cater in Illinois but the facilities in Iowa cannot accomodate such a crowd. Am looking for ideas on some purchased items which I can doctor and others which can be made ahead and only refrigerated (no freezer space. Looking for 3 to 5 ideas with 2 hot at the max. Crowd is very down to earth and "gourmet" finger foods would not go over well. Please help.
