A TO Z BREAD BARS
3 1/2 cups all-purpose white flour or whole wheat flour 1 tablespoon cinnamon 1 teaspoon baking soda 1 teaspoon salt 1/2 teaspoon baking powder 2 cups granulated sugar 4 large eggs 1/2 cup plus 1 1/2 tablespoons oil (canola or soybean) 1/2 cup applesauce 3 cups chopped apples or 3 cups grated zucchini (or substitute equal amounts other fruits or vegetables) 1 tablespoon vanilla
Preheat oven to 325 degrees. Coat a jelly roll pan with cooking spray.
Combine dry ingredients and set aside.
Mix together sugar, eggs, oil, and applesauce. Add apples (or zucchini) and vanilla.
Add dry ingredients to wet ingredients in three batches and mix well after each addition. Pour into prepared pan.
Bake for 35 to 40 minutes until a wooden toothpick inserted the center of the cake comes out clean.
