Hi Deb;
Janet posted a lot of those recipes at my request, so I would be happy to return the favor by trying to help you. I posted a recipe for Blender Mayonnaise made with egg beaters that is fairly low in both fat and sodium. You could use this for chicken salad, just poach some boneless, skinless chicken breasts and chop them up with some celery, a little pickle relish, the low mayonnaise and serve inside a hollowed out tomato. You could do the same with the albacore tuna. Also could use the mayo on potato salad.

I'm going to look up some of the recipes I found in some cookbooks also and i will post those for you in the next few days.
