Low-Fat Banana Quick Bread

1 3/4 cups all-purpose flour
1/2 tsp baking soda
1 1/2 tsp baking powder
1 cup sugar
1 tsp ground cinnamon
1/4 tsp salt
1 cup mashed ripe banana (2-3 med bananas)
4 tbsp canola oil
3 large egg whites, slightly beaten
1 tsp vanilla

Preheat oven to 350 degrees. Spray 8x5 loaf pan w/ non-stick spray.
In medium bowl, combine first 6 ingredients. Add mashed banana and stir into dry mixture until evenly mixed.
In a seperate bowl, combine oil, egg whites and vanilla. Pour into flour mixture. Stir just until moistened. DO NOT OVERMIX.
Pour into prepared pan and bake 40-50 minutes or until bread tests done. Cool for 10 minutes and remove from pan. Makes 16 servings.

Serving: 125 calories/4 grams fat
